Winemaking practises
Our unique cellar operates on a complete gravity flow system, with the grapes entering the cellar on the top floor and gradually working their way down to the maturation cellar on the bottom level, with as little intervention as possible.

Barrel fermentation of red wines
Barrels are fitted with a cylindrical perforated metal plunger inserted through a hole in one end of the barrel. The barrels are then mounted on curved metal frames with castors, each barrel is manually rotated every four hours for several days to facilitate thorough skin contact. In this way, the entire vinification process takes place in the barrel and the aromatic potential of the grapes is completely preserved. The method gives wines which are rounder, have more volume, substance, complexity and which are more precise aromatically and have a silkier finish.
