Soils are quite different depending on the altitude. Some soils lower down the slopes are alluvial soils with higher clay content and higher water retention while the top slopes contain more small stones. The vineyards are planted on terraces against steep slopes facing west or south within a circle of mountains. Winters are very cold with snow covering the mountain tops. Vines are trellised and thin high canopies are producing wines with good natural acidity. Cooler summers, high altitude and less wind create a gentler climate and a slow, long ripening period. Grapes are typically harvested later than the other sites and in the beginning days of autumn. The vineyards produce an intense Sauvignon with a fresh expression of gooseberry, citrus and fresh cut grass.
